Dark Mode Off / On

Sometimes I like to serve my family something just a little different. These eggs are a twist on Huevo Rancheros, the eggs aren’t poached in salsa, but they make a fabulous quick and filling breakfast or brunch treat. My kids love them and call them “Fancy Eggs” but there is really nothing fancy at all about the humble egg, tortilla and bean dish. Simple food at it’s best is almost always better to me than fancy, complicated recipes. A big bonus here is that they go together in a flash and I can have them on the table in less than 15 minutes. They make a really nice light dinner as well if you have *ahem* forgotten to get anything out to make. I’m sure you’re all way more organized than me and that doesn’t happen to you, but if it does, here is a great recipe to fall back on!

Easy Ranch Eggs Recipe

  • 4 corn tortillas
  • 1 can chili beans in mild or medium sauce
  • 4 eggs
  • 1/2 cup cheese
  • sliced pickled jalapenos, optional
  • hot sauce, optional
  • Oil for frying

In a skillet, add a little oil and heat over medium until hot. Crisp corn tortillas for a few seconds on each side. Let drain on paper towels and set aside. In a small saucepan, heat the beans and their sauce. Fry your eggs any way you like them, even scrambled is fine, and drain. Now we’re ready to assemble!

On a plate, place 2 tortillas.

Spoon some of the warm beans over the top….

Add your eggs.

Then sprinkle with cheese and garnish with hot sauce and slice jalapenos if desired.

There you have it! Of course, there are several other items you could add to the dish. Sliced avocados, sour cream, salsa and cilantro would all be wonderful additions as well. Just like any recipe, this is just a base that you can add to or take away from as you wish to suit your tastes!
