Last weekend was pretty awesome. We celebrated our 12 year anniversary. WHAT? I’m not sure how that happened! But it did! And it is exciting. Just like birthdays we should celebrate each and every year.
I didn’t think we would be able to celebrate this year. At least, not by ourselves. Since we moved, we do not have family or friends nearby that we trust to watch the kids. So they go with us everywhere. That is OK! We love it. But you know, every now and then, all couples need alone time.
I was so excited to discover my hubby had made plans for that alone time to happen! My fabulous mom in law and grandma in law, came HERE! They played with the kids all weekend so we could go out! ON A DATE! WOOHOO! It’s been a LONG time since that happened. It was exciting!
The next day, we spent here at home with family and enjoyed every moment. Movies, cards, food, and games! It was raining (as it always does here) so we made the best of it inside. I even did a little baking.
You know that I am watching my diet. We are doing low carb, gluten free, and as much at home cooking as possible. I crave sweets a lot! That is what inspired this low carb snickerdoodles recipe. It is also gluten free because I did not use white four, I used almond flour. Little man helped in the kitchen too.
And you probably know that when the little ones help, some cookies may look like this.
And that is OK!
The cookies were fabulous! Especially when dipped in milk. YUM!

I’ve just got to know: Did the dough taste good? I always cooked half the cookies and saved half the dough for a separate treat.
