You will love these easy beef enchiladas that are quick and easy and on the table in no time at all!
I am all about easy dinners on weeknights. After a long day working the last thing I want to do is spend hours on my feet and in the kitchen. So while getting creative in the kitchen last week I came up with these easy beef enchiladas. It was such a family hit that I am making them again tonight! This time I wanted to share the steps for you so you can make and enjoy these easy beef enchiladas!

Ingredients:
- El Paso Enchilada Sauce
- Taco Seasoning
- 1 pound ground beef
- Shredded cheese – I have used pepper jack and cheddar (BOTH ARE YUM)
- Large Tortillas- I used 8in tortillas

- Preheat oven to 350
- Brown your ground meat on the stove.
- Once browned and drained follow the taco seasoning instructions and add to the pan. Cook according to instructions. For me, that was about 5 mins.
- While the meet cooks get out your 9 x 13 glass pan, sauce, cheese, and tortillas.
- Add enchilada sauce to the bottom of the pan. Just enough to make a light coating on the bottom.
- To make the enchiladas you will add 1 large spoonful of the beef to your tortilla. Top with cheese and then roll up tightly.

- Place the rolled tortillas with the opening along the bottom of the pan. Place them close together so that you can fit them all in your pan.

- Once they are all rolled and in the pan add the rest of the enchilada sauce to the top.
- Then top with shredded cheese.

- Tightly wrap the dish with aluminum foil and place in the oven.
- Bake at 350 for 30 to 35 minutes.
Take out and ENJOY! Served best with Spanish rice and beans and some homemade salsa! YUM!
