Easy Pineapple Salsa Recipe
Ingredients:
- 1 handful of cilantro
- 1 cup chopped pineapple
- 1/4 cup white onion
- 1/4 cup red bell pepper
- The juice of 1 lime
- 1/2 jalapeno (adjust to your spice preference)
Add all ingredients to the blender. Pulse about 4 times for chunky salsa. I did it about 8 times and it created the smoother salsa I was looking for. You can pulse it until it is how you like it.
I enjoyed the pineapple salsa over grilled chicken and a whole wheat tortilla. I mixed it with the grilled chicken and added a little along the top. I topped mine off with a few more cilantro leaves.
This would be a great topping over fish or chicken alone. This would be awesome with chips too.
