This weekend I really wanted an easy gluten free snack. I searched Pinterest and found recipes for peanut butter balls but most were full of gluten and sugar. I decided to make my own gluten free snack balls using my belly friendly ingredients.Easy No Bake Gluten Free Peanut Butter Oatmeal Chocolate Balls (with High Protein Option)

You will need:

2 Tablespoons Coconut Oil (room temperature, almost pure liquid)
1 Teaspoon pure maple syrup
1 Cup Gluten Free Oatmeal
1/2 Peanut Butter (I used Earth Balance Gluten Free Peanut Butter)
1 Teaspoon Enjoy Life Chocolate Chips (more or less as desired)

 I put the gluten free oatmeal in the blender and gave it a few pulses. You can see the consistency I ended up with here. This was perfect.Easy No Bake Gluten Free Peanut Butter Oatmeal Chocolate Balls (with High Protein Option)

Mix the other ingredients together with the oatmeal.

Roll into small balls and place on parchment paper.

Place in the fridge for about 10 minutes.

Store in an airtight container. I recommend leaving the container out of the fridge.

For us, the batch did not last long. My son and I devoured them!

This recipe makes 12-16 depending on the ball size.

 Options:

In my second batch I wanted a higher protein version. I made them exactly the same except I added 1/2 scoop of Miss Fit Gluten Free Protein Powder. This batch I did not share with the kiddos. It was excellent for the pick me up I needed in the afternoon.

 You could also make a chocolate glaze like I made here. Drizzle it over the top before you pop it in the fridge. Let it harden. YUM!

  1. I might try to make these this week! I think I’m only missing chocolate chips (ate ’em all!).

    I don’t know if I have gfree oatmeal, but I do have regular. 🙂
